Familia Mondragón
Cava Dragón es un proyecto familiar que inició en 2019 con el viñedo y se expandió en 2022 con una sala de degustación y restaurante en El Porvenir, en Ensenada, Baja California.
La historia
"Empieza [en 2015] cuando adquirimos el terreno. Cuando se estaba haciendo la construcción, mi papá me pidió que le ayudara a instalar el viñedo. Viendo nuestra visión del viñedo, viendo cómo queríamos que funcionara el rancho, nos dimos cuenta de que la única forma de hacerlo sustentable era poniendo una vinícola, no solo vendiendo la uva sino procesando la uva. Yo y mi hermana nos juntamos, empezamos la empresa, juntamos nuestros ahorros y nos vamos de lleno sin tener un gran conocimiento de la cuestión del vino. Nos empezamos a establecer aquí con una visión de un rancho y una agricultura restaurativa, en donde utilizamos todo lo que nos da la tierra para regresárselo".

At Cava Dragon we make wines with a human and personal approach, with bold notes and flavors, but without losing sight of the classic.
We seek the implementation of technology, but without letting it affect the purity of the flavor of the fruit, establishing as our primary focus the selection and harvesting of the grapes at the exact moment for the design of each of our wines, without adding or removing anything of its original flavor, with a minimal intervention approach in all our wines.
Without corrections like the wine itself, we let the situations flow and the product decorate those spaces and conversations. Exceptional wines, exalting the call of the grape and the company of the moment.
