Mondragón Family
Cava Dragón is a family project that started in 2019 with the vineyard and expanded in 2022 with a tasting room and restaurant in El Porvenir, in Ensenada, Baja California.
Our story
"It all started [in 2015] when we acquired the land. While construction was underway, my dad asked me to help him set up the vineyard. Looking at our vision for the vineyard, seeing how we wanted the ranch to function, we realized that the only way to make it sustainable was by establishing a winery, not just selling the grapes but processing them. My sister and I got together, started the company, pooled our savings, and went all in without much prior knowledge of winemaking. We began to settle here with a vision of a ranch and restorative agriculture, where we use everything the land gives us to give back to it."

At Cava Dragon we make wines with a human and personal approach, with bold notes and flavors, but without losing sight of the classic.
We seek the implementation of technology, but without letting it affect the purity of the flavor of the fruit, establishing as our primary focus the selection and harvesting of the grapes at the exact moment for the design of each of our wines, without adding or removing anything of its original flavor, with a minimal intervention approach in all our wines.
Without corrections like the wine itself, we let the situations flow and the product decorate those spaces and conversations. Exceptional wines, exalting the call of the grape and the company of the moment.
